I am not a rice eater. Before we got married the only rice I ate was fried rice from P.F. Chang’s or other similar restaurants. Michael loves rice, though, and wanted to register for a rice cooker, which we got. He created this Mexican rice recipe that has become one of our favorite meals. It’s so quick and easy; we keep the ingredients on hand so we can make this at any time. And did I mention that it’s delicious? Cause it is. Props to my hubby for thinking this up!

to make a rice cooker full, you’ll need 1 and 1/4 “rice cups” full of dry rice (not the same amount as a regular cup!)
put the rice in the cooker and add in one packet of taco seasoning
pour in the whole can of chicken broth
add several shakes of crushed red pepper, depending on how spicy you like it
looks yucky, but this is what it will look like before it’s cooked
close the lid and cook until the rice cooker says it is done (usually 30 – 45 minutes)

Ingredients
- 1 and 1/4 rice cups of brown rice
- 1 packet taco seasoning
- 1 can black beans, rinsed
- 1 can chicken broth
- 1 can southwestern corn
- crushed red pepper
Instructions
Mix all ingredients and cook in rice cooker until the rice cooker says it’s done.
