Did you know you can make cookies using cake mix? I’ve heard of it but never really considered making any until the other day. We needed to make something to take with us to singing night at church and I didn’t want to go buy lots of groceries. I saw a box of lemon cake mix we’d had in the cabinet for awhile and decided to give cake mix cookies a try.
I Googled for recipes and all the recipes were very similar (and all very simple). This is what I chose:
- 1 box of cake mix (any flavor, I used lemon)
- 1/3 cup oil
- 2 eggs, beaten
Preheat oven to 375. Mix cake mix, oil, and eggs together. Drop rounded spoonfuls onto a cookie sheet. Bake 6 minutes.
That’s it! Easy as pie (or cookies).
The verdict: I didn’t prefer the flavor – lemon is not my favorite. The consistency, however, was perfect and you just can’t beat the simplicity of the recipe. Although I usually like to make my cookies from scratch, I will definitely keep this recipe in mind for when I need something easy and quick. Next time cake mix is on sale I’m going to grab another box or two to have on hand.
