Instant Pot Vegetable Soup: Healthy, Light, and Delicious

I am obsessed with this soup!  I shared recently about how a few months ago I completed a 30 day master cleanse and as you can imagine after not eating any solid food for 30 days your body has to go through an ease out process.

There is a specific protocol to follow for the ease out and one of the things to eat is vegetable soup.  They don’t provide an exact recipe but my friend who mentored me through the cleanse shared her loose recipe so I took that, wrote down some amounts, and compiled it for you!

If you’re easing out of a cleanse and back in to eating real food this is perfect but even if you aren’t cleansing and just want a yummy soup that is chock full of vegetables, this is a fantastic recipe!

instant pot vegetable soup recipe

This recipe makes a lot (a pretty full 6 quart Instant Pot) and when I first made it I was like “no way will I ever eat all that, I’m going to give half of it to a friend who is currently on the cleanse for her to have when she gets to her ease in period”.  Ha!  I fell totally in love with this soup and not only ended up eating the whole pot but then made multiple other batches of it over the course of the next month or so.

Instant Pot Vegetable Soup Recipe

(adapted from my friend Cara Lee)

Ingredients 

– 1 zucchini or squash, chopped into small pieces
– 4 cloves garlic
– 1/2 onion, chopped into small pieces
– 1 carrot, chopped into small pieces
– 1 bag frozen peas
– 1 bag frozen riced cauliflower
– 1 bag frozen okra (discard the hard top pieces)
– 5 radishes, chopped into chunks
– 1 can Rotel (blended because I don’t like tomato chunks, if you like chunks of tomato then just add it as-is)
– 1/4 to 1/2 cup fresh parsley (I didn’t measure) or 1/8 to 1/4 cup dried parsley
– 1/2 TBSP mineral salt
– 2 tsp pepper
– 2 tsp garlic powder
– 60 – 70 ounces of water (or basically enough to fill the IP to the top fill line)
– 1 lemon or lemon vitality essential oil
– white vinegar

Add all of the above ingredients except for the lemon and vinegar to your Instant Pot and cook on manual, high pressure for 15 minutes. You could also do this in your crockpot or on the stovetop if you don’t have an Instant Pot.

After it cooks, juice one lemon and added to the pot (Cara Lee also said sometimes she adds one drop of lemon oil to each bowl instead of the lemon juice to the pot like I did, so you can do either).

If you like a little extra vinegar-y kick, I also add a splash of white vinegar to each bowl.  To me that takes the soup from good to YUMMMMM!!  Each time I eat it I really can’t believe that I am eating spoonful after spoonful of veggies like cauliflower and okra and totally loving it.

I typically do not like soup with large chunks of vegetables so I cut mine pretty small (and even blend the Rotel) and I haven’t had any issues with the texture.  If you like chunky soup you can make bigger pieces!
